Peter's Pizza Dough
I love homemade pizza, this is the dough I like to use, it's not the most traditional recipe but it's the way I like it! Give it a try.

Mix the flour and salt in a large bowl.
Add the honey to warm water stir it in a little. Then add the yeast and let it sit for a few minutes.
Slowly combine the dry mix and liquid, don't be impatient. At this point I use a mechanical mixer on slow, you can use your hands if you want.
Once all the liquid has been added. Knead the dough by hand until it becomes elastic and smooth.
Place the dough into the large bowl and cover it with a damp cloth for atleast 6-8 hours, I like overnight.
Once ready take it out carefully cut it into 6 portions and gently create balls of dough, you don't want to lose all the air.
Add your tomato, basil and cheese and you have pizza and whatever else you like.
Put your pizza into an oven up high I usually use 200 degrees C, fan assisted, watch it rise! You'll know when the colour is right to take it out of the oven.
Feel the crunch on the outside, cloud in the middle and enjoy!
